Boozy Margarita Cupcakes

I've been on a bit of a tequila kick lately. Maybe it's because it reminds me of spring and summer and I'm just sick of this cold New York winter. Regardless, cooking with alcohol packs a serious punch. Think about your favorite vodka sauce or even these Guinness Chocolate Cakes I made for St. Patrick's day. When paired with the right ingredients, it really elevates the flavor. Partida Tequila (c/o) proved to be no different when used as an ingredient in these boozy margarita cupcakes. 

What You’ll Need:

(Makes 1 dozen cupcakes)

Cake

  • 3/4 stick butter, melted & cooled
  • 3 eggs
  • 1/4 heavy cream
  • 1/4 cup Partida Blanco tequila
  • 1 cup flour
  • 3/4 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • zests of 2 limes

Cream Cheese Frosting

  • 1 teaspoon tequila
  • 1/2 stick butter, softened
  • 1 package cream cheese, softened
  • 3 cups powdered sugar

Compote

  • 1 large container strawberries, stems removed and chopped
  • 1 container of fresh blueberries
  • 1/3 cup sugar
  • 2 Tbsp Partida Tequila
  • 1 lime, juiced
  • 1/2 teaspoon Sea Salt

Directions:

Step One: The Cake

Preheat oven to 350F. Beat eggs until well mixed, then add butter, cream, tequila & salt. Mix until combined. Sift together flour, sugar and baking powder. Add to wet mixture and stir until smooth. Divide amongst 12 cupcake tins and bake for 16-18 minutes, or until the tops just spring back when touched.

Step Two: The Frosting

Beat together tequila, softened butter and cream cheese on high speed until light and fluffy. Add powdered sugar 1/2 a cup at a time, beating well after each addition. Once all sugar is added, beat for an additional 3 minuted to incorporate air.

Step Three: The Compote

Combine all ingredients in a bowl and cover with plastic wrap. Refrigerate for at least 30 minutes.

Step Four: Assemble

When cupcakes have cooled, frost cupcakes with the cream cheese & tequila icing. Strain the compote, reserving the liquid. Use a spoon to drizzle liquid on top of each cupcake and garnish with the fruit.
