Pasta Aioli is very easy to make, but delights the senses in a way we cannot even explain. It’s light enough to have as a side-dish, but satisfying enough to eat as a main course. Earthy garlic, spicy red pepper flakes, and fresh herbs will make your mouths water.
What you need (4-6 servings):
- 1lb of pasta (we choose linguini)
- 5-6 cloves of garlic
- handful of basil
- handful of parsley
- 1 tbls red Pepper flakes
- olive oil-enough to coat the pasta
- salt and pepper to taste
- cheese to garnish (we choose parmesan)
Fill a large pot of water with water, bring that to a boil and salt it. It’s important to do this first since it will take the longest. Cook pasta according to directions on the box. Some pasta takes longer to cook than others.
While the water is heating up, rinse the herbs and roughly chop the garlic, basil and parsley. Set aside.
Take out a large sauté pan and coat the bottom of it with olive oil. Hint: make sure the sauté pan is large enough to hold all the cooked pasta, eventually you will add all the cooked pasta back in the pan. Add in the red pepper flakes; we usually do 2-3 shakes to give it a nice kick.
When the pasta is about half way done, turn on the heat for the olive oil, test the oil with a little bit of garlic and if it sizzles we’re in business. Add the remaining garlic and cook till golden brown.
When the pasta is finished, drain thoroughly and add to the hot garlic and oil. Season the pasta with salt and pepper, remove from the heat, and incorporate the fresh herbs.
Place into serving bowls and grate some of your favorite cheese over the pasta. For an extra kick, add some more of the red pepper flakes and enjoy!
