Brussel sprouts aren’t the most popular side dish. They have quite a negative reputation, but all they need is a little fat and salt to take out the bitterness. Enter: bacon, which pretty much makes everything taste better. When roasted with those crunchy strips from heaven, they become a delicious and nutritious food for all to enjoy.
If you’re committed to this dish or are looking to impress some guests, swap out regular bacon for thick-cut smoked bacon or italian pancetta. You can also add sliced almonds for crunch, finely chopped onions or shallots for sweetness, or garlic for additional flavoring. Be creative and give those brussel sprouts a fighting chance to be loved.
What you need (2 servings):
- 2 cups of fresh brussel sprouts
- 4 strips of bacon (or more, if desired)
- salt and pepper
- olive oil
- baking sheet
- medium pan
Preheat the oven to 400 and start frying the bacon in a medium pan. We used 2 strips/serving, but feel free to add more or less depending on your taste. While the bacon is cooking, start quartering your sprouts.
When the bacon is nice and crispy, fish them out of the pan with some tongs and set aside. Toss the chopped brussel sprouts in the pan and flash-fry them in the bacon fat. Then, pour everything onto a baking sheet and spread the sprouts out evenly. Salt and pepper to taste, and put them in the oven for about 15-20 minutes.
When the sprouts are looking slightly golden and delicious, remove from the oven and place them into a serving bowl. Roughly chop the bacon and incorporate it into the sprouts.
Voila! Very easy and very satisfying. Serve with your favorite meat and enjoy!
