Skinny Eggplant Rollatini

I often order the eggplant rollatini at Italian restaurants. When you're craving a rich, comforting lasagna, but desire a healthier version, this is a good option. It's also very easy and relatively quick to make- especially if you buy a pre-made sauce.

What You’ll Need

  • 2 eggplants
  • 1 cup part skim ricotta
  • 1 cup reduced-fat mozzarella cheese (1/4 cup reserved)
  • 1/2 cup shredded parmesan
  • 9 oz frozen spinach, thawed and drained
  • 1 handful of fresh basil, finely chopped
  • 1 egg
  • 1 minced garlic clove
  • salt and pepper to taste
  • 1 cup marinara or arrabbiata sauce

Step 1

Slice the eggplant into thin sheets and sprinkle with salt. Let sit for 15-20 minutes to draw out some moisture. Then gently pat with a dry paper towel to remove the sweat.

Step 2

Preheat the oven to 400F. Grease a large baking sheet with a light spray of olive or canola oil, and place the eggplant slices on it. Do not overlap. You may need to use two baking sheets or bake them in batches. Bake for 10-12 minutes, or until slightly golden before removing them from the oven.

While eggplants are cooking, combine the ricotta cheese, egg, salt, pepper, and garlic in a large mixing bowl. Then fold in 3/4 cup of mozzarella, parmesan, spinach, and basil.

Step 4

Start by spreading 2 tablespoons of tomato sauce on the bottom of a large pyrex dish. This will keep the eggplant rollatinis from sticking to the dish. Then, take 1 slice of eggplant and a large dollop (about 2 tablespoons) and roll it up. Continue with all of the eggplant and ricotta mixture, then place the rolls into the pyrex dish with the folds underneath to prevent them from unraveling.

Step 5

Top the rollatinis with about 1/2 cup of tomato sauce and sprinkle with remaining mozzarella. Bake them in the oven at 350F and bake for 30-45 minutes (depending on your oven,) or until the cheese is slightly golden and bubbling. Remove from the oven and enjoy!
